    Minted Orange Lamb Shanks



    4 American lamb shanks
    2 tablespoon olive oil
    1 onion, chopped
    1 clove garlic, minced
    1/2 cup chicken stock
    1/2 cup orange juice
    1 teaspoon sugar
    3 tablespoon lemon juice
    2 tablespoon flour
    1 tomato, cut in wedges
    1 teaspoon dried mint
    2 cups long grain wild rice, cooked
    1 orange, sliced

    Recipe




    Brown lamb shanks in oil. Add onion and garlic; sauté until soft. Add chicken stock, orange juice, sugar and salt; cover and simmer 1 ½ hours. Remove shanks, keep warm. Stir lemon juice with flour; add liquid; stir until thickened. Add tomato and mint leaves; heat 2 minutes. Pour sauce over lamb. Serve with rice, garnish with orange slices.
