Oven Roasted Rack of Lamb
4 Lamb Racks 16-18oz
Tbsp Olive Oil
2 Shallots (Diced)
1/8 cup Sugar
1/2 cup Port Wine
1/2 cup Veal Demi (may sustitute Chicken Broth)
Salt & Pepper to Taste Recipe
Sautee Shallots in Olive until Caramelized (clear). Coat with sugar. Add Port and Veal Demi. Reduce by Half. Add Salt & Pepper to Taste.
While sauce is reducing, rub Lamb Rack with Olive Oil and sprinkle with Salt & Pepper. Sear Lamb Rack in Hot Skillet coated with Olive Oil. Bake in 425 Oven for approx 10 min for Medium Rare. Let Meat rest for 2 minutes then Slice Rack in half. Top with Sauce Reduction Serve with Garlic Mashed Potatoes and Asparagus. Serves 4.
