Venison Chops with Blackberry Butter
2 Venison Chops
¼ tsp. Salt
¼ tsp. Black Pepper
1 oz. Red Wine
2 Tbsp. Sugar
5 Blackberries
1 Tbsp. ButterRecipe
Place on broiler and cook to temperature.
As the Venison is cooking prepare the Blackberry butter
On medium heat add red wine, sugar, to skillet.
Add 5 blackberries and reduce for 1-2 minutes.
Fold in 1 oz butter and reduce for 1 more minute (set aside).
TO PLATE:
2. Place cooked Venison Chops on the platter criss cross
3Ladle sauce over the top of both pieces of Venison in the center of the meat.
