    Fajitas on a Stick from David


    8 12 inch bamboo skewers
    1 lb. boneless beef top sirloin steak, with fat trimmed
    1/3 cup Italian dressing
    3 Tbs. fresh lime juice
    2 bell peppers, each cut into quarters
    2 medium onions, cut crosswise into 1/2 inch slices
    8 medium or large flour tortillas, warmed
    1/3 cup prepared salsa, more or less according to taste

    Soak skewers in water 10 mins drain.
    Cut steak crosswise into 1/2 inch thick strips.
    Thread an equal amount of beef onto each skewer.
    In a small bowl, combine dressing and lime juice, mixing well; brush onto beef, peppers and onions.

    Place vegetables on grill over medium ash covered coals; grill peppers uncovered 12-15 mins and onions 15-20 mins or until tender, turning both once.
    Approx 10 mins before vegetables are done, move vegetables to outer edge of grill.

    Place beef in center of grill; grill 8-10 mins for medium rare to medium doneness, turning once.

    Season beef with salt, as desired; remove beef from skewers. Serve beef and vegetables in tortillas with salsa.
