    Baked Pork & Rice


    12-ounces lean pork tenderloin
    1 cup thinly sliced celery
    ½ cup chopped onions
    1½ cups chicken broth
    ½ cup Basmati or Jasmine rice (May use any long-grain rice.)
    2 tbsp Tamari (soy sauce)
    pinch of black pepper
    3 tbsp chopped pimientos (optional)

    Recipe





    Cut pork into ½-inch cubes.

    Place in a shallow pan and bake at 350 degrees about 30 minutes or until browned.

    Remove from pan with a slotted spoon and place in a 1½-quart casserole.

    Place celery, onions, and broth in a small saucepan.

    Bring to a boil, reduce heat, cover, and simmer for 10 minutes.

    Add rice, Tamari, and pepper to hot broth.

    Mix lightly and add to meat in casserole.

    Mix lightly. Cover tightly and bake at 350 degrees about 40 minutes or until rice is tender.

    Remove from oven.

    Stir pimientos into hot pork and rice.

    Serve hot, using ¼ of the total (about ¾ cup) serving.

    Serves 4
