    Chicken Noodle Parmigiana


    2 egg, beaten
    1 cup Italian-flavored bread crumbs
    8 boneless, skinless chicken breast halves
    1/2 cup vegetable oil
    2 jar (26 ounces) spaghetti sauce
    3 cups water
    4 packages (3 ounces each) ramen noodles, broken up
    (seasoning packet reserved for another use)
    1 cup (4 ounces) shredded mozzarella cheese

    Recipe



    1. Place the egg in a shallow dish. Place the bread crumbs in another shallow dish. Dip the chicken in the egg then in the bread crumbs, coating completely.

    2. In a large skillet, heat the oil over medium heat. Cook the chicken for 4 to 5 minutes per side, or until no pink remains.

    3. Remove the chicken to a serving platter and cover to keep warm. Add the spaghetti sauce, water, and noodles to the skillet. Cook for 4 to 5 minutes, or until the noodles are tender, stirring occasionally.

    4. Reduce the heat to medium-low and return the chicken to the skillet, placing it over the noodles. Sprinkle the chicken with the mozzarella cheese. Cover and cook for 4 to 5 minutes, or until the chicken is heated through and the cheese is melted.

    Makes 8 servings
