Black Beans and Rice from David
1 pound dried black beans
10 cups water
1 green pepper, diced
2/3 cup olive oil
1 large onion, chopped
garlic salt, to taste
1 pound bacon, diced
1 green pepper, diced
4 teaspoons salt
1/2 teaspoon pepper
2 tablespoons olive oil
White rice
3 tablespoons oil
3 cups water
1 tablespoon salt
1 pound rice
1 pint sour cream (optional)
Recipe
Wash beans and soak with 1 diced green pepper in water 6-8 hours or
overnight. (see Note)
Boil beans in this water for 45 minutes or until tender. Heat olive
oil in skillet; add onion, green pepper, garlic salt and bacon; cook
until light brown. Pour mixture into beans; add salt and pepper. Cook
1 hour longer. Add 2 T olive oil when ready to serve.
To cook rice, combine water, oil, and salt. Bring to full boil. Add
rice. When it comes to a boil, reduce heat to simmer and cook 30
minutes or until dine.
Serve black beans over rice with chopped raw
onions and a dollop of sour cream. Can be a main dish or an
accompaniment to a nice smoked pork roast. You could add more liquid and
make black bean soup.
NOTE: I don't see the reasoning in adding the diced green pepper to the beans
while the beans soak over night, I would add this pepper along with the other
pepper and cook it in the skillet with the oil, seems right to me
NOTE 2: this would be great if topped with some cider vinegar and maybe
a little hot pepper & vinegar sauce.
