    Recipe Introduction

Tasty ground beef in cheesy biscuit cups everyone loves!

    List of Ingredients

Cheesy BBQ Beef & Onion Cups from Angelique

1 can refrigerated flakey cheese biscuits (8 biscuits)
    2 pounds ground beef
1 medium white or yellow onion, chopped
1/2 cup BBQ Sauce with brown sugar
    1/4 cup soy sauce
    shredded cheddar and mozzarella cheeses
    salt and pepper to taste

    Recipe

Preheat oven to 350F degrees. Brown beef and onion with soy sauce in skillet, stirring frequently until meat is cooked and evenly broken apart. Stir in salt and pepper. Drain grease. Stir in BBQ sauce. Set aside to cool. Separate refrigerated biscuits. Split 6 biscuits in half by dividing between the layers. Roll each half on a lightly floured board, increasing the size of the circles to 3 inches across. Place one half biscuit circle into each greased cup of a cupcake tin, folding and pressing to make it conform to the cup (Almost all of the dough should be in the cup). Be careful not to tear biscuit or leave holes. Fill 2/3 full with meat mixture, pressing down firmly, and top with sprinkling of cheeses. Roll remaining two biscuits, also separated in half, until they are approximately 1/4 inch thick.

Cut each flattened biscuit half into strips about 1/4 inch wide. Lay strips of dough on top of meat cups in a crossed pattern so that the meat and cheese shows through. Press edges of strips to the biscuit cups. Some cups may be left without dough strips on top. Bake at 350F degrees for 18 minutes or until biscuit dough is light brown. Carefully lift meat cups out of cupcake tin onto plate to cool for 10 minutes before serving. Prep time: 20 minutes. Cook time: 18 minutes. Makes 12 servings
