    Georgia Peach Aspic


    1 envelope unflavored gelatin
    1/4 cup cold water
    2 packages peach flavored gelatin -- 3 oz
    1 1/4 cups boiling water
    1 cup orange juice
    grated rind of 1 lemon
    3 tablespoons lemon juice
    1 1/2 cups pureed fresh Georgia peaches
    1/4 cup sugar -- if needed

    Cream Cheese Dressing
    1 package cream cheese
    1 tablespoon mayonnaise
    1 peach – halved

    Recipe




    Soften gelatin in 1/4 C cold water. Dissolve both unflavored and peach gelatins in 1 1/4 C boiling water.

    Add orange juice, rind of lemon and lemon juice. Add pureed peaches;sweeten, if necessary. Pour into 1 1/2 quart mold and chill until set. Serve with cream cheese.

    Dressing. Cream the cream cheese until smooth. Add mayonnaise, blending well. Add pureed peach mix.
