Potato Pancake Wedges from Marge
4 medium potatoes shredded (about 1 1/3 pounds uncooked)
1/2 cup seasoned bread crumbs
1/2 cup minced onion
2 eggs and 1 egg white beaten
1/4 cup chopped parsley
1 teaspoon salt
1/4 teaspoon pepper
2 teaspoons olive oil
3/4 cup unsweetened applesauce
3/4 cup nonfat sour cream substitute (or unflavored yogurt)Recipe
Preheat oven to 450 degrees.
In large bowl mix all ingredients except oil apple sauce and sour cream substitute.
Coat a 12 inch pizza pan with vegetable cooking spray lightly press potato mixture into pan. Brush lightly with oil.
Bake about 20 minutes until top is crisp and golden brown.
Cut into wedges.
Serve with applesauce and sour cream substitute.
