    Chicken Pie


    c. Or more shredded cooked chicken or turkey
    1 "All-Ready Pie Crust" (Pillsbury)
    4 Tbsp. Margarine
    4 Tbsp. Flour
    1 tsp. Salt
    ¼ tsp. Pepper
    ¼ tsp. Thyme
    1 c. Chicken broth (or 1 chicken bouillon cube in 1 c. Boiling water)
    1 c. Milk 1 can peas and carrots, drained and 1 can small onions, drained or
    1 pkg. (10 oz.) frozen peas, 1 large carrot, sliced and 1 small onion, diced, sautéed in the margarine before adding flour

    Recipe




    Heat oven to 425°.

    Set aside chicken.

    Prepare pastry.

    Melt margarine in pan over low heat.
    (Cook peas, carrots, and onions if using fresh/frozen).

    Blend in flour, salt, pepper and thyme.

    Cook over low heat stirring until smooth and bubbly.

    Remove from heat.

    Stir in chicken broth and milk slowly.

    Heat to boiling, stirring constantly.

    Boil and stir 1 minute.

    Stir in chicken (and canned veggies, if using).

    Pour into pastry lined pie pan.

    Cover with pastry.

    Bake 35-40 minutes or until golden brown.

    Let cool at least 20 minutes.

    Note: Make sure you allow cooling time!
