Grilled Fruit Summer Salad with Peach-Walnut Dressing
Dressing
1/3 cup walnuts, toasted
½ cup chopped fresh peaches
¼ cup orange juice
1 TBSP lemon or lime juice
Salad
4 cups baby spinach
4 cups arugula
3 peaches
8 slices watermelon
1 small Jicama root
1 cucumber
½ cup walnuts, toasted
Recipe
1. Put all dressing ingredients in a food processor or high-powered blender and puree until smooth. Add a little water if needed to thin to a pourable consistency.
2. Place peaches and watermelon on a hot grill for 2-3 min, turning once to heat through and add grill-marks
3. Toss all other salad ingredients in a large bowl. Chop warm fruit and add to salad.
4. Drizzle with dressing, toss to coat well and serve immediately
