Snowflake Salad from Hel
1 (8 oz.) crushed pineapple
1 (3 oz.) pkg. lemon gelatin
1 c. boiling water
1 c. cottage cheese
3/4 c. sugar
1/4 c. chopped unsalted walnuts
1 c. whipped cream
Recipe
Drain pineapple - reserve juice - add enough water to reserved juice to measure 1 cup. Dissolve gelatin in boiling water in bowl.
Stir in reserved juice.
Chill until syrupy.
Beat until fluffy.
Add cottage cheese, pineapple, sugar and walnuts; mix well.
Fold in whipped cream.
Chill overnight.
May use green or red gelatin for seasonal salads.
Yield: 8-10 servings.
