    Wilted Cole Slaw with a Hot Bacon Dressing


    Dressing:

    ½ lb. bacon, diced
    ¼ cup shallots, chopped fine
    ¼ cup olive oil
    ½ cup sherry wine vinegar
    1/8 cup granulated sugar
    1 teaspoon ground white pepper
    1 teaspoon sea salt
    1 tablespoon Dijon mustard
    3 tablespoons heavy cream

    Slaw:

    8 cups chopped fresh green cabbage (food processor with grater
    attachment)
    2 bunches scallions, trimmed and sliced

    Recipe




    Cook the bacon in a medium saucepan over medium heat until crisp and remove the bacon from the pan. Sweat shallots in the bacon grease until the shallots are transparent. Reserve 2 tablespoons of the bacon grease in the pan with the shallots.

    Re-warm the bacon grease over a medium heat. Whisk in the olive oil, vinegar and sugar. Continue whisking until the sugar dissolves completely. Remove from heat and whisk in the pepper, salt, Dijon mustard and cream until emulsified.

    Meanwhile, toss the cabbage with the bacon and scallions until it is mixed well. While the dressing is warm, toss the cabbage mixture with the dressing and mix until all parts are slightly wilted and
    dressed.
