    24 Hour Potato Salad

    24 Hour Potato Salad


    1 med. head cabbage, finely shredded
    6 small Yukon Gold potatoes, boiled and thinly sliced
    6 hard boiled eggs, thinly sliced
    1 med. onion, finely sliced in rings
    1 green bell pepper, thinly sliced in rings
    1 1/4 cups Hellman's Mayonnaise (it takes a lot of mayonnaise)
    1/4 cup French's mustard (mix into mayo)
    Salt and pepper



    Recipe



    Place layer of shredded cabbage in round salad bowl, then a layer of potatoes, layer of sliced eggs, layer of onion and Bell pepper rings.

    Repeat Layers

    Between each layer, add a thin layer of Mayonnaise/Mustard, salt and pepper to taste.
    Cover and refrigerate 24 hours.
