Bacon & Potato Salad
2 medium potatoes ¼ cup chopped celery
3 T. “light” mayonnaise 2 T. Hormel real bacon pieces
2 t. Dijon mustard ½ t. salt
2 t. balsamic vinegar ½ cracked pepper
½ cup chopped green onions ½ t. celery seed
Recipe
Cook the unpeeled potatoes until tender. Cool, peel and cut into cubes. Mix the mayonnaise, mustard, and vinegar together and toss with the potatoes. Add the remaining ingredients and mix well. Chill at least 6 hours for the flavors to blend.
Makes 2 to 3 servings.
