    BLT & Guacamole from David


    2 large ripe avocados, peeled & pitted
    2 tbsp minced fresh cilantro
    2 pickled jalapenos, stemmed & minced
    2 tsp fresh lime juice
    12 thick-cut bacon slices
    8 whole grain bread slices
    8 thin tomato slices
    4 medium romaine lettuce leaves

    Recipe




    Preheat broiler. Mash avocados in med bowl. Stir in cilantro, jalapenos and lime juice. Season with salt and pepper.


    Cook bacon in large skillet over MED-HIGH heat until crisp, turning occasionally, about 7 minutes. Drain (I would bake the bacon at 400 degrees for 15 minutes so it doesn't
    shrink or burn).

    Meanwhile, toast bread slices on 1 side under broiler. Spread guacamole over untoasted side of each slice while still warm. Place 3 bacon slices on each of 4 bread slices. Top with tomatoes, then lettuce. Place remaining 4 bread slices atop lettuce and serve.
