Zucchini and Tomato Sauce
1 medium onion, sliced
2 Tbsp. olive oil
4 to 5 medium zucchini, cut into julienne strips
2 (16-oz.) cans tomatoes, cut up
Salt
Pepper
Garlic powderRecipe
In a large cook onion in oil until tender. Add zucchini and cook until lightly browned. Add tomatoes. Season with salt, pepper and garlic powder.
Bring to boiling; reduce heat. Simmer, uncovered, for 30 to 40 minutes or until desired consistency.
Makes 4 cups sauce or enough for 1 pound pasta.
