    Cream Cheese Mashed Potatoes


    4 lbs. baking potatoes(peeled and quartered)
    1 8 oz. package cream cheese
    1 8 oz. container sour cream
    1/2 cup butter or margarine
    1 1/2 tsp. salt
    1/2 tsp. pepper
    melted butter & chopped fresh parsley (optional)

    Recipe




    In a large pot over high heat combine potatoes with enough water to cover.

    Bring to boil.

    Reduce heat to medium.

    Simmer until potatoes are tender, about 25 minutes.

    Drain; return to pot.

    Add cream cheese, sour cream, salt and pepper.

    Mash until smooth.

    If desired, serve drizzled with butter and sprinkled with parsley.
