Zucchini Slice
1 large (or 2 medium) zucchini grated skin on
1 large (or 2 medium) potatoes grated skin on
2 carrots grated (I did peel mine but you could leave the skin on)
1/2 can of corn - or just buy a half size can
2 rashers of bacon diced or just buy the diced bacon from the deli section
at the supermarket
5 eggs
1 cup self raising flour
1 cup grated cheese
Recipe
Chuck it all in a mixing bowl and stir. Add some salt and pepper to taste
and then bung in the (moderate) oven. I put mine in a greased (spray oil)
square cake tin and filled it to a cm under the rim and it didn't rise much
at all. Mine took about 40-50 mins to cook but I kept testing from 35 mins
onwards until the knife came out clean. I often also double it and cook it
in a large pyrex lasagna dish. Leftovers are scrummy the following day!
