Griledl Baked Potatoes with Avacado
2 ripe avocados, peeled, seeded, cut in chunks
3 Tbsp fresh lime juice
8 pieces bacon, cooked crisp, crumbled
1/4 cup chopped chives
Salt and freshly ground pepper, to taste

Scrub potatoes and pierce all over with fork or sharp knife. Wrap each potato in a large piece of foil. Place wrapped potatoes directly on hot coals, or on grill prepared for high heat. Cook for 45 minutes, or until soft, turning frequently with tongs.
Mash avocado chunks with lime juice in large bowl. Add bacon and chives, combine well. Season to taste with salt and pepper. Split baked potatoes and spoon guacamole and sour cream on top to enjoy.
