Cheddar Sauced Baked Potatoes from David
4 oz. piece cheddar cheese
1 medium onion, chopped
2 T. margarine
2 T. flour
1 cup milk
1/2 t. dry mustard
Pinch ground red pepper
Chopped parsley
Recipe
For potatoes, preheat oven to 425. Scrub well, dry and pierce potatoes with fork in several places. Put on baking sheet. Bake about 1 hour until knife inserted in center comes out easily. Meanwhile, in food processor or with grater, shred cheese. In medium pan, saut� onion in butter until soft, about 5 minutes. Stir in flour. Cook, stirring 1 minute. With wire whisk, or wooden spoon, stir in milk. Cook, stirring until sauce has thickened and is smooth, 3 to 5 minutes. Gradually stir in cheese until melted. Remove from heat. Stir. blend in mustard and red pepper. To serve, blossom each potato by piercing with a fork in the shape of an X on top. Then push some of the potato up with slight pressure form fingers. Put on serving platter. Pour about 1/4 cup sauce evenly over each potato. Top with parsley.
