Baked Rice and Cheese from David
1 cup uncooked rice
1 small onion, minced
6 T. butter
3 T. flour
1 t. each salt and Worcestershire
1/4 t. pepper
1/2 t. dry mustard
2 cups milk
1/2 lb. sharp cheddar cheese
3 T. fine dry bread crumbs
Recipe
Cook and drain rice as directed on package. Cook onion 5 minutes in 1/4 cup butter. Blend in flour and seasonings. Gradually add milk and cook, stirring constantly until thickened. Dice 1/2 of cheese and add, stirring until blended. Slice remaining cheese. Put 1/2 of rice in shallow 1 1/2 quart baking dish
Cover with layer of slices cheese. Pour 1/2 of hot mixture over top. Repeat. Sprinkle crumbs over top and dot with remaining 2 T. of butter. Bake in 400 oven for 20 minutes.
Makes 4 to 6 servings
