Brown Rice and Mushrooms
1 cup brown rice, uncooked
1/4 cup green onions, chopped
2 cups fresh mushrooms, sliced
1 Tbsp. butter
1/3 cup fresh parsley, chopped
1/4 cup dry white wine
2 Tbsp. fresh lemon juice
Pinch of salt and pepperRecipe
Cook rice according to package directions. In a separate
skillet, sauté green onions and mushrooms in butter, add remaining
ingredients, stir and remove from heat. Stir hot cooked rice into
mushroom mixture and serve.
The Skinny: Again, if you don't want to use wine, substitute an
equal measure of apple cider.
