    Asparagus Soup from Robin Fleming


    1/2 cup butter
    2 large yellow onions, chopped
    4 large garlic cloves, chopped
    1- 1/2 quarts chicken stock
    3 lbs. asparagus
    1 bunch fresh parsley, stems removed, chopped a bit
    2 medium carrots, cut up
    8 large Basil leaves, fresh
    1 Tbsp. tarragon
    1 tsp. salt
    1 tsp. pepper
    a pinch of Cayenne pepper

    Recipe





    Cook onion and garlic slowly in butter - do not brown. Add chicken stock and heat. Cut asparagus in 1-inch pieces and add to stock. Add remaining ingredients. Cook covered on low heat 50 minutes or until asparagus is very tender. Cool and put through food processor. Freezes well.

    To serve, may add spoonful of sour cream and/or chopped tomatoes.
