    Beef Barley Soup from David


    2 quarts beef stock
    1 cup leftover cooked beef, diced
    1 pkg. (12 oz.) barley
    1 pkg. (10 oz.) frozen peas and carrots, thawed
    1/2 cup onions, chopped
    Ground black pepper, to taste:

    In a large stock pot or Dutch oven, bring beef stock to a gentle boil.


    Add beef, barley, peas and carrots and onion, reduce to simmer, cover
    and cook at least 1 hour.


    Check the barley, as to how soft it is. You made need to add more beef
    stock if to much evaporates.


    Add ground pepper to taste. Cook until soup reaches desired thickness.


    Serves: 6.
