Potato Soup from Hel
3 medium potatoes, peeled, cubed
1 rib celery, diced
2 onions, sliced thinly
2 carrots, peeled, diced
2 qt. water
to taste salt, pepper
3 tbsp. butter or margarine
2 tbsp. flour
1 cup Half-and-Half®
1 sprig finely chopped parsley
Recipe
Cover vegetables with water, add seasonings and cook until tender.
Heat butter until light brown, stir in flour and keep stirring until flour is browned.
Add about 1/2 cup cold water and blend until smooth; gradually add half-and-half, stirring constantly to avoid lumps.
Add mixture to soup, cook a few minutes more to blend thoroughly.
Serve with chopped parsley.
Makes 6-8 servings.
