    Sweet Potato Vegetable Soup


    1 cup onion, chopped
    1/2 cup each celery, chopped; carrot, chopped
    1 lb. sweet potatoes, peeled, diced in 1/2" pieces
    3 cups chicken stock
    1 cup chopped tomato
    1 tsp. each: dried oregano, thyme, basil
    1 cup each frozen peas, green beans or broccoli; frozen corn
    to taste salt and pepper
    optional: pinch cayenne pepper or red pepper flakes
    1/3 cup parmesan cheese

    Spray soup pot with nonstick cooking spray; place over high heat. When pan is hot, add onions, celery and carrots; cook 3 minutes, stirring occasionally. Add rest of ingredients except salt, pepper and cayenne if using. Stir and bring to a boil. Boil soup 5 - 6 minutes, until sweet potatoes are just tender. Stir frequently. Season with salt and pepper and cool before refrigerating. It will stay fresh up to 3 days and taste better each day. Reheat before serving.

    Makes 6 servings.
