    Wisconsin Cheese Soup


    3/4 cup butter
    6 T. flour
    1 t. salt
    2 cups chicken broth
    1/2 cup EACH (onion, bell pepper, celery, carrots - all chopped VERY fine)
    4 cups milk
    1 block (8 oz.?) Kraft Olde English Sharp Cheese (in colored foil pkg)

    Brown the flour in a 1/2 cup of the melted butter over low heat until
    bubbly, stirring constantly . Slowly add milk and stir until thick and
    smooth. Saute' the vegetables in remaining 1/4 cup butter. Add the
    chicken broth, salt, and vegetables. Grate the cheese, add to the
    soup, and heat until the cheese melts and soup is creamy.
