Don't throw out those overripe bananas. Peel and mash them (speedy in the blender), stir in 1 teaspoon lemon juice for each banana, and freeze in an airtight container for up to 6 months. Defrost the banana puree overnight in the refrigerator and use in breads, cakes, daiquiris and other drinks, puddings, etc.
