When cutting a cake into two or three layers use a long piece of dental floss. Align the floss (unflavored) around the cake at the height you want the layer to be, cross it in front of you and pull the floss through the cake giving you a clean even cut.
Cheese cakes can also be portioned with dental floss or fishing line for a nice clean cut.
To help keep the cake level when finished, scrape a vertical line up the side of the cake. This will help you line up the layers when you reassemble the cake.
