    If you have any leftover citrus zest from making meat marinades or salad dressings, Mix it with one part kosher salt. The salt absorbs the oil and “preserves” the zest. Then use this salt to season vegetables and meats.
    Just sprinkle the citrus salt on steaks or chops before frying or grilling. Lime zest gives a Caribbean flavor to steaks, and orange zest is great with fish.
