Slice strawberries with an egg slicer. You will have all uniform

Any time when you have to much soft fruit like strawberries and don't
know what to do with them, liquify them with a little sugar and
freeze. Use as a sorbet or compote with desserts like chocolate

For strawberries and cream, the best way to present the strawberries
is to cut off the top and stalk, then quarter them from top to
bottom (customers at my hotel find them most pleasing presented in
this way). For the cream and a dash of brandy, some caster sugar and

a sturdy plastic straw. Push it up through the bottom of the

Place the berries in cool, well ventilated containers (32 to 40 F /
0 to 5 C). The moisture content of fresh strawberries is high, so
store uncovered or loosely covered.
