    This delicious vegetable may seem labor-intensive to eat, but it's worth it. Artichokes contain vitamin C, folate, dietary fiber, and a multitude of minerals. Artichokes contain from 25-75 calories (depending on size), no fat, and 170 milligrams of potassium. Artichokes vary in size. Large artichokes are often served stuffed with a savory filling and served either hot or cold. Baby artichokes do not have a choke so you can eat the whole thing-making them great for saut�ing and salads.


    How to Select Artichokes


    When shopping for artichokes, choose globes that are free of blemishes, feel heavy in your hand, have tightly-closed leaves, and are dark green in color. Be careful not to select an artichoke that has dry-looking leaves that are spread out, has dark patches, or appears to be turning brown. Peak season is March through May; however, you will find artichokes available throughout the year.
