    Remove the tender growing tips from your basil every 2-3 weeks until the weather begins to cool. This will keep your plants healthy and dense. It will also delay flowering, which affects the taste of the herb. Pinching back will provide you with a steady supply of basil for fresh use, but if you want to freeze basil for winter use, you can cut the plant back as much as 2/3. Basil tastes best if frozen rather than dried. To freeze, chop the basil and fill the cups of an ice cube tray, then cover with water and freeze. Once the cubes are frozen, place them in a freezer bag for storage.
