Boniato (Cuban Sweet Potato) Recipe
When purchasing boniatos, choose ones that are hard with no soft spots. They tend to be irregular in shape and skin color can vary from reddish to cream colored and are drier than other sweet potatoes and not as sweet. Do not refrigerate, rather store at 50 - 60 degrees F, in a dry, well ventilated area. Boniatos can be used as you would any other sweet potato. They are delicious baked or roasted. The flesh discolors rapidly when peeled, so put them in cold water right away. If you are boiling them, be sure they are completely covered with water for the same reason.
