Corning Beef

If you choose to corn beef yourself:
2-pound beef brisket
3/4 pound of salt
1/4 pound of sauce (optional)
Immerse the brisket in an enamel pot filled with 2 quarts of warm water, saturated with the salt (and the sugar, if desired). Weight the beef so that it is completely submerged (with a ceramic bowl, or something else heavy, and nonmetallic), let the water cool completely, and cover the pot. After 48 hours, rinse the (now corned beef) thoroughly with cold water.
