    How To Dry Herbs

    Recipe





    Harvest herbs by cutting them at the stalk level. Strip the leaves off the
    stems by holding in one hand and using your other hand pull opposite the way
    they grow; i.e., hold the top of the stem and run your hand down to the
    bottom. Put stripped leaves into a colander and rinse with cool water.
    Drain well and put on a couple layers of paper toweling. Cover with a
    couple more layers of paper toweling and pat gently, removing as much water
    as you can.

    Line a cookie sheet with heavy-duty aluminum foil. Spread herbs in a thin
    layer on the cookie sheet. Either allow to air dry for several days or
    alternately, put into your oven set at the lowest temperature with the door
    ajar and allow to dry in the oven. Several times per day, turn over the
    herbs using a long-handled pancake turner.

    When completely dry, remove from oven and allow to sit on a counter for at
    least 24 hours. Herbs must be brittle.

    When brittle bone dry, put into a Mason jar with a lid and screw band.
    This is what I use mayonnaise and peanut butter jars for so I don't use up
    the canning jars.

    When using dried herbs, remember that they are more potent than fresh. If a
    recipe calls for 1 tablespoon of fresh herbs, use 1 teaspoon of dried herbs.


    DRIED HOT PEPPER FLAKES

    Wash hot peppers in cold water. Wearing disposable rubber gloves, remove
    stem and blossom ends. Carefully seed peppers. Do not touch face or eyes.
    Put into a food processor and chop.

    Line a cookie sheet with heavy-duty aluminum foil. Spread chopped hot
    peppers in a thin layer on the cookie sheet. Either allow to air dry for
    several days or alternately, put into your oven set at the lowest
    temperature with the door ajar and allow to dry in the oven. Several times
    per day, turn over the hot peppers using a long-handled pancake turner.
    When you do this, be careful as the fumes are potent.

    When completely dry, remove from oven and allow to sit on a counter for at
    least 24 hours. Pepper flakes must be brittle.

    When brittle bone dry, put into a Mason jar with a lid and screw band.

    HOW TO DRY MUSHROOMS

    Remove stems from fresh mushrooms and save for other uses. Line a cookie
    sheet with heavy-duty aluminum foil. Place mushrooms on the cookie sheet.
    Allow to air dry for several days. Turn over twice a day. When brittle
    bone dry, put into a Mason jar with a lid and screw band.


    HOW TO DRY ONIONS OR LEEKS

    Peel onions and chop finely in a food processor. For leeks, cut off bottom
    end and darker tough leaves and discard. Rinse in cold water to remove sand
    and grit. Chop finely. Put on several layers of paper toweling and cover
    with a couple of more layers of paper towel. Pat gently to remove excess
    moisture.

    Line a cookie sheet with heavy-duty aluminum foil. Place onions or leeks on
    the cookie sheet. Allow to air dry for several days. Turn over twice a day
