How to Grill Chicken

With skinless chicken, marinate or coat with oil to prevent drying. To prevent flare ups move chicken pieces to an unused part of the grill every time you turn them.
Steps to successfully grilling chicken:
Trim excess fat and skin from chicken.
Wash chicken parts and pat dry with paper towels.
Keep chicken refrigerated until ready to grill.
Preheat grill to a medium heat.
Coat cooking grate with oil.
Place chicken on hot grill, breast side up to start.
Turn every 10 minutes.
If you are going to add a barbecue sauce, do it after 30 minutes of cooking time.
After about 40 minutes test for doneness by cutting into a thick piece. The juices should be clear.
Serve.
Safety note: We recommend using a meat thermometer inserted into the thickest part of the meat but not touching bone to check for doneness. Temperature should reach 170 degrees in chicken breasts, 180 in other kinds of bone-in chicken.
