Remove the dark green top of the leek. This part contains a lot of
chlorophyll and tends to be quite bitter.
Next, cut away the root system at the base of the leek.
Now, slice the leek in half length-wise.
Take these two halves, line them up together, and chop your leeks into
pieces. At this point, you can decide what shape and size you want.
Leeks tend to be extremely dirty 99 percent of the time. Especially when
harvested after a rain, the soil can get into almost every layer of the
leek. The best way to clean them is to dice them, and then put your dice in
a bowl of cold water. The soil particles will sink to the bottom as the
leek dice stays afloat.
