Preserving Peppers Recipe
I think the easiest way to store peppers is to freeze them.
They can be frozen whole, but they take up a lot of freezer
space that way, so go ahead and cut them in strips for
stir-frys, chop them for soups and casseroles, and cut them
in half for stuffing. Keep your favorite recipes in mind as
you prepare your peppers.
Peppers don't require blanching, just wash them and remove
the seeds, then pack into freezer containers or bags,
label, and freeze. Peppers retain their flavor well when
frozen, but they will be soft when thawed.
Hot, thin-walled peppers also dry well, and need very
little preparation. If you plan to dry thick-walled peppers,
you'll have to peel them first. The skins will slip right
off roasted peppers, and when dried, roasted peppers retain
that yummy roasted pepper flavor.
Small peppers can be dried whole. To dry larger peppers,
cut them into desire sizes. The secret is to dry them very
slowly. Spread them evenly on a cookie sheet and dry them
in the oven at the lowest temperature for 6-12 hours, or in
a dehydrator. They can also be air dried in a sunny spot
with good air circulation. Turn the peppers often to make
sure they dry evenly.
