Roasted Bell Pepper

Lots of recipes feature roasted bell peppers.
Because the raw product can be expensive you should take advantage of the times when it's on sale.
Buy as many peppers as you can.
Then roast and freeze. Cook them directly over the flames on your gas cook top or under the broiler turning until blackened all over.
Then drop them in to a zip top plastic bag to cool. The charred skins will slide off easily under running water.
Seed the peppers and pack in air tight freezer bags.
Store frozen for about 6 months.
