    This is a method most people don't realize can be used,

    Salting a skillet, meaning putting salt into a hot skillet, is one
    method of keeping the hamburger from sticking when you first put it
    in. Also salt draws juices to the surface and so retards searing, so
    that it isn't cooked so much inside, as it will cook further in the
    dish.
    If you're salt sensitive or restricting your salt you could omit
    this step if you're using a non-stick pan. If using stainless steel,
    you could just put in a little oil. It will still turn out fine.
