    How to Turn Your Gas Grill into a Smoker
    First, fire up your grill and put it on low. Remove your grill rack. Place some wood chips in a foil pan and soak them in water. Let the chips soak for about 1 hour. Remove the chips and punch small holes in the bottom of foil pan. Place the chips back into the pan and place the pan on the bottom of your grill. The heat from your grill will start the chips to smoke. Once smoking turn your heat off completely and place your grilling rack back on. Take your raw meat product and place it on the grill rack and close the lid. When your smoke starts to die down, turn on the grill again to low for a couple of minutes.

    Always check the temperature of your smoker before adding your meat. The perfect temperature is for the smoker to be at 225 degrees.

    When you are grilling chicken on your gas grill next time, try spraying it with some flavor.
    Pick up a spray bottle at your local store. Mix 1 part orange juice (no pulp) with 1 part lemon juice. Grill the chicken dry until it gets a nice color and then spray with the mixture about every 15 minutes. If you are grilling beef or pork fill your bottle with 1 part beef bouillon, ½ part teriyaki and ½ part soy sauce. Spray on beef or pork every 15 minutes. Truly a flavorful experience!

    Fat is not ALWAYS bad
    You should never trim the fat from meat before you BBQ. The fat is a natural basting agent that helps keep meat moist and tender. You will see that most of the fat will dissolve away while cooking.

    Great Barbeque Takes Time
    When smoking whole pork butts, be sure to be patient. The key is to let the meat cook all the way through. It is important to let the smoky flavor penetrate the meat. Most people who smoke whole cuts of meat don't give it enough time. You should get yourself a small professional thermometer, and check for the eternal temperature to be at 190. At that point you're ready to enjoy.

    Variety is the Spice of Life
    When smoking your meat, try bringing some added flavor to your smoke. For instance, get yourself some hickory wood. Place the wood in a large bowl and the soak the wood in apple cider. You just created an apple wood smoke. Remember to let the liquid soak for at least an hour for maximum flavor. Try using orange juice or even pineapple juice. Be creative. The sky's the limit.
