Here's a vegetarian alternative to hamburgers. Ordinary ketchup is my condiment of choice, with a juicy dill on the side.

Savory Nut Patties On Sesame Buns
Bread
4 sesame hamburger buns, halved horizontally
Mayonnaise and mustard for spreading
Patties
1 cup finely chopped walnuts (about 4 ounces), preferably toasted
¼ cup cottage cheese
¼ cup dried bread crumbs
1 egg, lightly beaten
1 tablespoon soy sauce
1 tablespoon finely chopped onion
1 tablespoon minced fresh flat-leaf parsley
2 cloves garlic, minced
1 teaspoon minced fresh thyme, or ¼ teaspoon dried thyme (see Tip)
1 tablespoon olive oil
To complete the recipe
4 lettuce leaves
Four ¼-inch-thick tomato slices
Eight ¼-inch-thick avocado slices, optional
Recipe
Preheat the oven to 375° F. Arrange the buns, cut sides up, on a baking sheet. Toast in the oven for about 4 minutes, or until the cut surfaces of the buns are lightly browned. Spread them with mayonnaise and/or mustard.
To make the patties, combine the patty ingredients, except the oil, in a medium bowl. Form the mixture into 4 patties about 3 ½ inches in diameter and ½ inch thick. Heat the oil in a large nonstick skillet over medium-high heat. Cook the patties until lightly browned, about 3 minutes per side. Or cook on an outdoor grill.
Layer the bottom half of a bun with lettuce, a patty, a tomato slice, and 2 avocado slices. Top with the upper half of the bun.
Advance preparation
The patty mixture will keep for up to 2 days in a covered container in the refrigerator. Cook the patties, toast the buns, and assemble the sandwiches just before serving.
