    Duck leg medium diced 10oz
    Bacon ground 4oz
    Shallots minced 3 T
    Garlic minced 1tsp
    Orange zest 1 T
    Rosemary minced 1 tsp
    S&P TTaste
    Brandy 1T
    Triple Sec 1T
    Citrus Aioli
    Mayo 8oz
    Marmalade 4oz

    Roma tomato sliced 10 ea
    Micro Greens 2c
    Red onion sliced 1ea

    Mini Rosemary Buns 10ea

    Mini Duck Burgers

    Ingredients
    Quantity - 10 serv.
    Preparation Steps
    Duck Breast medium diced 10oz
    1. Place all in ingredients into a bowl and let marinate for at least 3 hours.
    2. Put mixture through a medium or course grinder.
    3. Form patties into 2 ¼ oz discs
    4. Cook on grill or sear in a sauté pan and cook until MR or Medium.
    5. Citrus Aioli; add mayo and marmalade into a blender and blend well.
    6. Place aioli on toasted bun and add desired condiments.
