Lobster 12 oz
Cream 2 oz
Egg white 2 oz
Brandy 1 T
Smoke salt TT
Chives chopped 1 T
Dill chopped 1T
Cayenne pepper pinch
White pepper TT
Lemon juice 1 tsp
Bay scallops sliced 2oz
Crawfish diced 2oz
Bay shrimp sliced 2oz
Salmon small diced 2oz
Aioli
Mayo 1 c
garlic 2 T
Saffron 2 T
Smoke Salt TT

Sweet Potato Fries
Sweet potatoes 20oz
White truffle oil 1tsp
Cinnamon-sugar 40%-60% mix 1c
1. Seafood Burgers: Take lobster meat and puree till smooth,
2. Add in cream and egg white and remainder of ingredients.
3. Place mixture in a bowl and add remaining seafood and mix well. Make 2 ¼ oz patties and sear on both sides and finish in a 350 oven until done.
4. Aioli: Place all ingredients accept chives into blender and blend tell very smooth. Add chives.
5. Sweet Potatoes:Thin juliene potatoes par fry (350) ½ way let cool and then fry until crisp. Toss with oil and sugar mix.
6. Plate as diagramed. .
