Creamed Albacore Tuna

1/4 c Butter
1/4 c Flour
1/2 ts Salt
1/4 ts Pepper
2 c heavy cream
1 cn Albacore (only) tuna, drained
Minced fresh dill for garnish (optional)
Recipe
To make white sauce; melt butter, blend in flour, salt and pepper. Mix until smooth. Gradually stir in milk and heat while stirring constantly. Heat until mixture boils and thickens.
To sauce add drained tuna fish. Gently stir until well mixed and thoroughly heated.Add dill.
Serve over toast, popovers, rice, etc.
Makes approximately 2 1/2 cups.
