Fresh Salmon with Thai Chili Butter

½ oz. Canola Oil
8 oz. Fresh Salmon (Skin Off)
½ tsp. Salt
½ tsp. Black Pepper
1 oz. Lemon Water
1 Cup Roasted Vegetables
¼ Cup Roasted Garlic & Grape Tomatoes
½ Cup Sauteed Bay Scallops
1 Tbsp. Thai Chili Butter
Fresh Chopped Parsley
TO COOK:
Season both sides of salmon with salt and pepper
In a hot pie tin ladle canola oil in to it, place fish into pie tin and ladle lemon water
over the fish. Place in 450 degree oven till mediam
TO PLATE:
1. Place the Roasted Vegetables in the center of a platter. Place the cooked fish on top of the
platter
2. Top fish with Fried Scallops and Roasted Garlic & Grape Tomatoes.
3. Drizzle Thai Chili Butter over and around the fish and toppings.
6. Serve Immediately
