Fried soft shell crab

Start with making a (Milk Wash), Combine (2) eggs, ¾ milk, and (1) cup cold water, whisk till mixed well.
If you have a true Soft Shell Crab, peel back the shell half way to clean leaving the shell intact when cooking.
If it’s a Paper Shell Crab, remove the top shell completely and discard, clean removing the fat from within and discard, wash under faucet with cold water to remove
any remaining fat you missed.
Dredge in unseasoned all-purpose flour, then dip in the milk wash you have already prepared drain just for a second then place in to a seasoned white self rising
Corn meal, that’s seasoned with salt & pepper to taste.
Fry in hot 350 to 375 degree cooking oil until golden.
Serve as a seafood main course, and also makes wonderful sandwiches, or po-boys!
